PMMail allows three options for quoting text in replies. By default, PMMail will quote all text in a message using ">" as the first character of each line.
By accessing the Account -> Properties -> Preferences menu, you can turn off the default quoting or change the character inserted before quoted text. If you uncheck the "Quote message text..." option, you will not be able to use the third option of quoting specific text only (described below).
To quote only certain portions of text, use your mouse to highlight the text you wish to quote and select 'Reply'/'Reply All' from the toolbar or Message menu. This will insert the highlighted text into the compose window along with the quote string of "On #DATE# #ORIGINALAUTHOR# wrote:"
You are also given the option to use or not use quoting when selecting 'Reply'/'Reply All' from the Message menu. Holding the mouse pointer over either option will display another menu offering to include/exclude the quoting from your reply.
